Zucchini & Feta Fritters


These delicious gluten free fritters are perfect for making on the weekend for easy meals during the week. Just serve with a simple salad or eat all on their own!


  • Olive oil, for frying

  • 4 small zucchini, grated

  • 3 eggs, beaten

  • 200g feta

  • 1 cup chickpea flour

  • 1 tsp baking powder

  • Handful of fresh mint, roughly chopped

  • Handful of fresh parsley, roughly chopped

  • Pinch sea salt and black pepper


  • Place zucchini in layers of paper towel to remove excess water

  • Combine zucchini, eggs, feta, flour, backing powder, mint, parsley, salt and pepper in a bowl

  • Heat 1 tablespoon oil in a large frying pan over low-medium heat. Add 2 tablespoons of zucchini mixture to the pan and flatten with a spatula

  • Repeat and cook, in batches, for 2-3 minutes each side or until golden

These fritters are a great protein-rich snack and also a good source of potassium, providing about a quarter of the recommended daily intake (per serve), with a higher amount if served with a leafy green salad.
